What Label Rouge flour (Foricher) means

Why Pan Pan bakes with French Foricher flour, Label Rouge certified, and what that quality mark actually stands for.

Ask what makes one loaf different from another, and the answer often starts with the most basic ingredient there is: the flour. At Pan Pan, our flour comes from Foricher, a mill in France, and part of it carries the Label Rouge mark.

Label Rouge is a French quality label that has existed for decades, awarded to products that go through stricter production conditions than the standard. For flour, that means the origin and the milling process are checked and tracked, not left to chance. It isn’t a marketing word stuck on a bag - it’s a certification system that exists independently of Pan Pan: third-party confirmation that a certain standard has been met.

Choosing Foricher flour wasn’t accidental for us. When the Pan Pan team trained in Paris with a Foricher master baker, the goal wasn’t just to learn recipes, but to understand why flour behaves differently in dough - how it absorbs water, how it ferments, how it reacts to heat in the oven. That knowledge carries directly into every loaf and pastry that comes out of our production.

In practical terms, good flour means a dough with proper structure, even fermentation, and the crust and crumb you’d expect from artisan bread - without needing extra additives to “fix” the dough along the way. Quality in the raw material makes the craft easier; it doesn’t replace the baker’s work.

It’s worth being clear: Label Rouge is a mark of quality for the flour and how it’s produced, not a health claim about the finished bread. We don’t claim our bread is “healthier” than any other - we claim the raw material behind it is carefully chosen, traceable, and verified by an outside body.

Next time you pick up a slice of White Sourdough or a French Baguette from our range, that slice carries a path that runs through French fields, a Foricher mill, and training in Paris - long before it ever became dough in our hands in Skopje. That’s the story behind the flour, and the quality speaks for itself in every bite.

If you’d like to see the flour in action, take a look at our bread selection in our shops, or ask in-store for more on the craft behind each product.
